S Video / RGB

What is really the better choice?
I've tested an RGB cable and compared it to a normal composite picture, and I really see a difference, it looks more colorful and thick and stuff :)But is RGB better then S Video?
I've heard that S Video has a higher resolution on the TV, but is there a visible difference?
